We list our spices whole rather than ground, and it is not for the sake of tradition. A spice’s aroma lives in volatile oils held inside the seed. Break the seed and those oils start leaving immediately.

Dry-roast, then grind

Cumin and coriander both improve with a short dry roast in a pan over a low flame — no oil, constant movement, and off the heat the moment they smell nutty. Let them cool completely before grinding, or the residual heat turns the powder pasty. Grind only what the week needs.

Cardamom and cloves

Green cardamom is the clearest case for buying whole: the pod is a sealed container, and cardamom powder goes flat faster than almost anything else in the rack. Crack the pod and use the seeds. Cloves are strong enough that a whole one dropped into rice or a gravy does the work without grinding at all.

Storing them

Airtight, opaque if you can, and nowhere near the stove. Heat and light are what degrade spice, not time alone — a jar of whole cumin kept properly will outlast a packet of ground cumin several times over.

If you buy one grinder for this, a small hand mill or a dedicated spice jar for your mixer is plenty. It does not need to be elaborate.
